Love and Avocado Caesar Chicken Salad



Happy Saturday! 

I have been obsessed with chicken salad lately. I have tried combining different ingredients, veggies, condiments, etc. to try and come up with a great recipe.

I also have been thinking of how I can incorporate some avocado instead of mayo. 

It’s AMAZING. Using 1/2 of an avocado, some salt & pepper, you can make a pretty delicious chicken salad.


But of course, I had to kick it up a notch to really enhance different flavors for a quick and healthy meal.
This worked perfectly with this month’s Recipe Redux theme, 

“Show us how you take a favorite recipe already on your blog – and ReDux the leftovers into a new dish”

So I immediately thought of using my Avocado-Caesar Dressing

It was perfect!



This would be good on a sandwich, on top of a salad, or in a wrap!

It is a great way to get some nutrients, healthy fats from the avocado and an even better way to use some left over chicken as well.

So this can incorporate two left over meals! 

Chicken can get boring sometimes, especially if it’s leftover from the night before. 

Adding some healthy flavor to it so that it still feels like you’re eating a comforting food is a better enhancement. 

Let’s get to it!

Avocado-Caesar Chicken Salad
Servings: 2Ingredients

Chicken Salad
1 6oz chicken breast
2 tbsp Avocado Caesar Dressing
1 stalk celery, finely chopped
1/2 red bell pepper, finely chopped
5 sprigs fresh cilantro or parsley
1/4 tsp salt and pepper

Avocado Dressing 
(if you want to make this to order)
1/2 Avocado
2 splashes Worcestershire
1/2 tbsp (fresh) lime juice
1/4 tsp garlic powder or 1/2 fresh garlic clove, minced or pressed using garlic press
1/2 tbsp Parmesan cheese
Salt and pepper, to taste


1. Cook chicken as you wish. I used left over chicken that was boiled. 

2. Chop it into chunks. Add celery and bell pepper.

3. If making dressing to order, combine ingredients.  Add dressing to chicken, mix and garnish with cilantro.

4. Add to 2 slices bread, 1 wrap or on top of a fresh salad! 



The bell pepper and celery give it that perfect crunch, with the tangy yet creamy dressing to complete it! 

It’s easy and healthy. 

A good go to meal for any day or occasion.

You can also add any veggies you like, such as onion, carrots, etc.
